Crispy Pakodas
Pakoda, also known as pakora, is a popular Indian snack made with gram flour and spices, deep-fried to crispy perfection. This easy recipe delivers crunchy and flavorful pakodas that are perfect with tea or coffee.
Ingredients (Serves 4)
For the Pakoda Batter:
• Besan (gram flour): 1 cup
• Rice flour: 2 tablespoons
• Onion: 1 large, thinly sliced
• Green chilies: 2, finely chopped
• Ginger: 1 teaspoon, grated
• Curry leaves: 1 sprig, chopped
• Coriander leaves: 2 tablespoons, chopped
• Asafoetida (hing): a pinch
• Turmeric powder: 1/4 teaspoon
• Red chili powder: 1 teaspoon
• Ajwain (carom seeds): 1/2 teaspoon
• Salt: 1 teaspoon (or to taste)
• Water: 2–3 tablespoons (adjust as needed)
For Frying:
• Oil: For deep frying
Instructions
Step 1: Prepare the Batter
1. In a mixing bowl, combine besan, rice flour, turmeric powder, red chili powder, ajwain, and salt.
2. Add the thinly sliced onions, green chilies, grated ginger, curry leaves, and coriander leaves. Mix well to coat the onions with the dry mixture.
3. Sprinkle water, 1 tablespoon at a time, and mix gently until the mixture clumps together. Do not add too much water; the batter should be thick and slightly crumbly.
Step 2: Fry the Pakodas
1. Heat oil in a deep pan or kadai over medium heat.
2. Drop small portions of the batter into the hot oil using your fingers or a spoon. Avoid overcrowding the pan.
3. Fry the pakodas on medium flame, stirring occasionally, until they turn golden brown and crispy.
4. Remove the pakodas with a slotted spoon and drain them on paper towels to remove excess oil.
Step 3: Serve
1. Serve the crispy pakodas hot with mint chutney, tamarind chutney, or tomato ketchup.
2. Pair with a cup of masala chai for a delightful snack experience.
